You choose the temperature levels. ThermoKoru waits for several readings above a level before increasing fan speed, which helps prevent rapid switching.
macOS lets apps read temperatures normally, but changing fan speeds requires a small Fan Helper that you approve during setup.
ThermoKoru stops manual control and attempts to return the fans to Apple Automatic.
